Studies on the Compositional Changes of Garlic during Growth


Abstract
Alliin and free amino acid contents of clove and bulblet of garlic after 1 month storage and at maturing stage were as followings;
1. Alliin content of clove and bulblet after 1 month storage was 1085.3 §·% and 1561.5 §·% on dry weight basis, respectively, and bulblet contained more than clove at maturing stage and after storage.
2. Free amino acid content of clove after 1 month storage was much less than that at maturing stage and bulblet contained more than stored clove.
It was found that stored bulb contained methionine which was not present at maturing stage.
Tryptophan which was present in a large amount could not be detected.
As a result it was supposed that 18 amino acids were presented. Cysteine, hydroxyproline, and arginine which were not detected in bulblet.
